7.5 inch Hand Forged Single Bevel Japanese Style Usuba Knife (Left Handed / Right Handed)
The Usuba is ideal for cutting vegetables and fruits which are served raw, because the thin and sharp blade produces cut surfaces with very little cell damage, and this minimizes the discoloration and change in flavor often caused by oxidation. The versatile middle section of the blade can be used for thinly slicing vegetables and also for performing the specialized Katsuramuki ("Rotary peeling”) technique.
Usuba literally means "thin blade" indicating its relative thinness compared to other knives, required for cutting through firm vegetables without cracking them. Due to its height and straight edge, usuba are also used for specialized cuts such as katsuramuki, shaving a vegetable cylinder into a thin sheet.
They differ from the Nakiri bōchō in the shape of the cutting edge. While the nakiri bōchō is sharpened from both sides, the usuba bōchō is is a single bevel and is sharpened only from one side, a style known as kataba in Japanese. The highest quality kataba blades have a slight depression on the flat side.
